The first book on food bio-processing in the country, "Fermented Foods: Principles and Technology" written by a UPLB alumna and former faculty member, Dr. Priscilla Chinte-Sanchez, was given the 2010 Outstanding Book Award by the National Academy of Science and Technology Philippines (NAST) on July 15 at the Manila Hotel.
The book, launched in 2009, provides information on the development of the fermentation process, from its ancient beginnings to its innovative applications today. The book has six sections which consist of 19 chapters on principles and local technologies for the production of fermented foods in the Philippines. The 516-page book discusses the principles and essential microorganisms in various fermentation processes, processes of improving and developing ancient fermentation techniques, and fermentation of nutritious and safe foods. It also discusses the standards, regulations, and laws created to ensure the safety and proper monitoring of fermented products in the country. The book is the only existing resource material that provides comprehensive data on ethnic food fermentation. Dr. Sanchez, a retired professor from UPLB, earned her Ph.D. in Applied Microbiology from the Tokyo University of Agriculture, and MS Plant Pathology (1965) and BS Agriculture (1957) from UPLB. She pioneered, and to this day continues to conduct researches on fermentation and its uses. She has authored numerous technical publications, textbooks, conference proceedings, handbooks, manuals, and modules. Dr. Sanchez has received numerous awards, among which are the Outstanding Microbiologist Award in 1989, Most Distinguished Microbiologist Award in 1990, and the Achievement Award in Biological Sciences by the National Research Council of the Philippines in 2002. She was also the UP Alumni Association's Centennial Distinguished Alumna in 2008 (Science and Technology). The International Society for Southeast Asian Agricultural Sciences (ISSAAS) named an award in her honor in 2005 to recognize outstanding works in agricultural research and excellence in leadership and research of members and affiliates of the ISSAAS. Dr. Sanchez serves as the chair of the accreditation board of the Philippine Academy of Microbiology. She is also a senior research fellow in the DA-Biotechnology Program. elsewhere by Filipino authors or co-authors. The books are judged based on quality and originality of content, contribution to science and technology, clarity of presentation, and thoroughness of documentation. (ALB Garcia)
